Piña Colada Cake
Moist yellow cake layers filled with a thin filling of pineapple preserves, vanilla whipped cream, and tiny "macaroon" coconut bits.
Puerto Rican Rum is washed onto the cake layers for a little extra "zing". The outside is iced with vanilla whipped cream and the sides finished with shredded coconut pieces.
